Stewed Okra with Tomatoes

Ingredients
  

  • 1 pound fresh okra trimmed and peeled
  • 1 large onion coarsely chopped
  • 1 bell pepper seeds removed and coarsely chopped
  • 1 can of diced tomato 15oz.
  • 1 cup tomato sauce
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cloves of garlic minced
  • 1 Tbsp. olive oil

Instructions
 

  • Heat oil in a saucepan over medium heat.
  • Add chopped onion and bell pepper and cook 4-5 minutes or until soft.
  • Add garlic and cook 1 minute until fragrant.
  • Next add okra, tomato sauce and diced tomato. Bring to a simmer.
  • Stir in salt, pepper and cook for 15-20 minutes until okra is tender.
