Stewed Okra with Tomatoes
Ingredients
- 1 pound fresh okra trimmed and peeled
- 1 large onion coarsely chopped
- 1 bell pepper seeds removed and coarsely chopped
- 1 can of diced tomato 15oz.
- 1 cup tomato sauce
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 cloves of garlic minced
- 1 Tbsp. olive oil
Instructions
- Heat oil in a saucepan over medium heat.
- Add chopped onion and bell pepper and cook 4-5 minutes or until soft.
- Add garlic and cook 1 minute until fragrant.
- Next add okra, tomato sauce and diced tomato. Bring to a simmer.
- Stir in salt, pepper and cook for 15-20 minutes until okra is tender.
