Celebration Greens

Ingredients
  

  • 1 Tbsp. avocado oil
  • 1/2 small onion or 3 large shallot bulbs chopped
  • 1 clove garlic finely chopped
  • 1 tsp. red pepper flakes
  • 1 can 15oz. diced tomatoes (Optional)
  • 2 cups vegetable stock
  • 1/4 tsp. apple cider vinegar
  • 1/2 tsp. sea salt
  • 2 bunches lacinato kale or collards greens pre-washed and cut

Instructions
 

  • In a large pot over medium-low heat, heat oil.
  • Add onions or shallots and garlic and sauté until clear or softened
  • Add red pepper flakes, tomatoes, apple cider vinegar, and vegetable stock and bring to a boil
  • Add kale or collard greens and salt (optional) and reduce heat to a simmer.
  • Cook greens until tender, approximately 35—40 minutes.
  • Remove from heat and enjoy!
