Celebration Greens
Ingredients
- 1 Tbsp. avocado oil
- 1/2 small onion or 3 large shallot bulbs chopped
- 1 clove garlic finely chopped
- 1 tsp. red pepper flakes
- 1 can 15oz. diced tomatoes (Optional)
- 2 cups vegetable stock
- 1/4 tsp. apple cider vinegar
- 1/2 tsp. sea salt
- 2 bunches lacinato kale or collards greens pre-washed and cut
Instructions
- In a large pot over medium-low heat, heat oil.
- Add onions or shallots and garlic and sauté until clear or softened
- Add red pepper flakes, tomatoes, apple cider vinegar, and vegetable stock and bring to a boil
- Add kale or collard greens and salt (optional) and reduce heat to a simmer.
- Cook greens until tender, approximately 35—40 minutes.
- Remove from heat and enjoy!
