Pomegranate and Spinach Salad

A refreshing fruit and vegetable salad

Ingredients
  

  • 4 cups fresh baby spinach
  • 1/2 cup pomegranate arils (seeds)
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts or pecans
  • 2 Tbsps. Balsamic vinegar
  • 2 Tbsps. Olive oil
  • 1 tsp. Dijon mustard
  • 1 tsp. honey
  • Salt and Pepper to taste

Instructions
 

  • In a large salad bowl, combine the spinach, pomegranate arils, feta cheese and chopped nuts.
  • In a separate small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper to create the dressing.
  • Drizzle the dressing over the salad and gently toss everything together until well coated.
  • Taste and adjust seasoning if needed.
  • Serve and enjoy!
