Watermelon Feta Salad

Course Salad, Side Dish

Ingredients
  

  • 4 cups cubed watermelon
  • 1/2 cup crumbled feta cheese or goat cheese
  • 1/4 cup fresh mint leaves chopped
  • 2 Tbsps. Olive oil
  • 1 Tbsp. balsamic vinegar or lime juice for a tangy twist.
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine watermelon, feta cheese and mint.
  • Drizzle olive oil and balsamic vinegar over the watermelon mixture.
  • Toss everything together until ingredients are well coated.
  • Add salt and pepper to taste.
  • Enjoy as a refreshing appetizer or side dish!
