Stovetop Potatoes and Onions

Course Side Dish

Ingredients
  

  • 1 bag of baby potatoes with skin
  • 2 garlic cloves minced
  • 1 large onion chopped
  • salt and pepper to taste
  • 2 Tbsps. olive or canola oil

Instructions
 

  • Chop onions, mince garlic. Set aside.
  • Wash potatoes and boil with them whole until tender. About 10 minutes. Drain.
  • Heat oil in a skillet and cook onions until soft. Add garlic and cook for 1 minute.
  • Add potatoes and toss in the hot oil until golden brown. Turn off the heat.
  • Add salt and pepper to taste.
  • Optional: Add fresh herbs at the end of cooking for extra flavor
