Quinoa Fiesta Bowl

Ingredients
  

  • 1 Tbsp olive oil
  • 1 jalapeno diced
  • 1 cup quinoa
  • 1 cup corn
  • 1 avocado diced
  • 2 cups low-sodium vegetable broth
  • 14.5 oz. can diced tomatoes drained
  • 15 oz. can black beans drained
  • 2 Tbsp chopped fresh cilantro
  • Juice of 1-2 limes
  • 1 tsp chili powder
  • ½ tsp of cumin
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium high heat.
  • Add jalapeño and cook, stirring frequently, until fragrant, about 1 minute.
  • Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin.
  • Simmer until quinoa is cooked through, about 20 minutes.
  • Top with avocado, cilantro, salt and pepper. Squeeze the lime juice & serve immediately.
