Pineapple Chicken

Ingredients
  

  • 2 large chicken breast cubed or ground chicken
  • 1 cup canned pineapple diced and drained
  • 1 Tbsp. olive or sesame oil
  • 2 Tbsps. ketchup
  • 2 Tbsps. soy sauce or coconut aminos
  • 2 Tbsps. honey
  • 2 tsps. orange juice
  • 1/4 tsp. powdered garlic
  • 1/4 tsp. powdered ginger

Instructions
 

  • Combine ketchup, soy sauce, honey, orange juice, garlic and ginger in a small bowl to make sauce and set aside.
  • Heat oil in a pan.
  • Add chicken and pineapple to pan and cook until lightly brown.
  • Add sauce to pan and simmer until chicken is fully cooked or reaches 165° F.
  • Serve with brown rice or cauliflower rice for a complete meal!
