Mango Cucumber Salad

Ingredients
  

  • 2 limes juiced and zest from 1 lime
  • 1 Tbsp. honey
  • 1/4 cup olive oil
  • 2 mangos chopped
  • 1 medium jicama chopped
  • 1 cucumber seeded and chopped
  • 1 red bell pepper chopped
  • 1/4 cup cilantro
  • Chili powder to taste
  • Salt to taste

Instructions
 

  • In a large bowl, whisk together lime juice, zest, and honey.
  • Continue whisking, slowly drizzle in oil.
  • Add mango, jicama, cucumber, red bell pepper, and cilantro. Toss to coat.
  • Season with chili powder and salt.
