Salmon Burger

Ingredients
  

  • 1 (14.75) can of salmon
  • 2 eggs
  • ½ cup red onion chopped small
  • ½ cup red pepper chopped small
  • cup whole wheat bread crumbs
  • 2 Tbsp lemon juice
  • ½ tsp dry thyme
  • ½ tsp dried rosemary
  • tsp black pepper

Instructions
 

  • Drain the salmon well and flake with a fork removing the bones (if desired).
  • Put ingredients in a bowl and combine.
  • Form the mixture into 5 patties each about the size of your palm or 3-4 oz.
  • Pan fry over medium-high heat with a bit of non-stick cooking spray for about 3 minutes on each side.
  • Enjoy!

*If you find the patties are not staying together well during cooking, an extra egg can be used.
