Pomegranate and Spinach Salad
A refreshing fruit and vegetable salad
Ingredients
- 4 cups fresh baby spinach
- 1/2 cup pomegranate arils (seeds)
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts or pecans
- 2 Tbsps. Balsamic vinegar
- 2 Tbsps. Olive oil
- 1 tsp. Dijon mustard
- 1 tsp. honey
- Salt and Pepper to taste
Instructions
- In a large salad bowl, combine the spinach, pomegranate arils, feta cheese and chopped nuts.
- In a separate small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad and gently toss everything together until well coated.
- Taste and adjust seasoning if needed.
- Serve and enjoy!
